Best Raw Cacao Truffle Recipe

Servings: 20 Truffles
- 2 cups raw soaked cashes pre-soak cashews overnight or minimum 4 hours
- 3/4 cup raw cacao powder
- 1 cup coconut oil melted
- 1/2 cup maple syrup
- 1/2 cup water
- 1 tbsp lemon juice
- 3/4 cup dried shredded coconut for rolling in
First, soak the raw cashews in water, for a minimum of 4 hours, maximum 12. 2. Second, rinse cashews and put into blender or food processor. Third, add cacao powder, melted coconut oil, maple syrup, and lemon juice. Turn on and blend for 30 seconds. 3. While blending add in water. This will emulsify ingredients, about 30 seconds to 1 minute. A food processor will take longer. Blend until you see no more bits of cashew. Add more water if needed, but no more than 1/4 cup. 4. Put in refrigerator until solid, or freezer. Then, roll into shape. Once in circle shape roll in dried coconut. 5. Put back into the fridge for at least 10 minutes and enjoy. Will keep in freezer or fridge.
